The Prep Cook’s primary purpose is to provide direct support to Chef Christopher Kostow and the Executive Chef in the preparation and service of a cuisine using elemental cooking techniques. The Prep Cook plays a vital part in the smooth-running of the Charter Oak by thoroughly and consistently adhering to our standards as instructed by the Executive Chef and Sous Chefs.
Duties & Responsibilities
- Work in collaboration with the AM Kitchen Manager
- Follow the guidance of Chef and Sous Chefs
- Fabrication of all garden products received
- Preparation of all stocks
- Ensure quality of all products used
- Ensure organization and cleanliness of walk-ins, dry storage, and kitchen
- Support staff in assigned project based work
- Other duties as assigned
Requirements
- Minimum 2 years relevant experience in a similar role in hospitality
- Pleasant personality with good written and verbal communication and interpersonal skills
- Proactive, takes initiative and is well organized
- Able to work fast and calm under pressure
- Mature, with an attention to detail
- Stand, sit, or walk for an extended period of time
- Move, lift and carry objects weighing up to 50 pounds with or without assistance
- Ability to multi-task and work independently as well as in and managing a team
- In-depth working knowledge of food and beverage preparation and presentation
- Desire to embrace locality and terroir as well as contribute to something larger
Work schedule may vary from week to week and will include weekends and holidays.
