Divino is a new Italian restaurant located in the heart of Glover Park, capturing the vibrant essence of Northern Italy’s culinary traditions. Led by seasoned restaurateurs, Divino offers a unique dining experience with fresh, locally-sourced ingredients, house-made pasta, and wood-fired oven specialties. We are currently seeking a skilled and motivated Executive Sous Chef to join our dynamic team.
The Executive Sous Chef assists the Executive Chef in managing kitchen operations, ensuring the highest quality of food production, and maintaining efficient kitchen workflows. This role involves leadership, creativity, and expertise in culinary skills to deliver exceptional dining experiences. The Executive Sous Chef also supervises staff, upholds food safety standards, and supports menu development.
Key Responsibilities:
Kitchen Operations:
- Oversee daily kitchen operations and ensure smooth workflow.
- Collaborate with the Executive Chef on menu planning, recipe creation, and ingredient sourcing.
- Maintain quality standards for food preparation, presentation, and taste.
Team Management:
- Lead, train, and mentor kitchen staff to enhance their skills and performance.
- Schedule shifts, assign duties, and ensure adequate staffing.
- Provide clear direction and maintain a positive work environment.
Food Production:
- Prepare and cook dishes to maintain consistency and quality.
- Assist in developing new recipes and incorporating seasonal ingredients.
- Monitor portion sizes, waste management, and inventory usage.
Compliance and Safety:
- Ensure kitchen operations comply with health and safety regulations.
- Conduct regular inspections for cleanliness, equipment maintenance, and food safety.
- Manage HACCP protocols and address any non-compliance issues.
Cost Management:
- Support cost control initiatives by managing inventory and minimizing waste.
- Assist in budgeting for food costs and labor expenses.
- Evaluate supplier relationships to maintain quality and cost-effectiveness.
Customer Experience:
- Address customer feedback regarding food quality and service.
- Work with the front-of-house team to ensure seamless service delivery.
- Collaborate on special events, private dining, and seasonal menus.
Qualifications:
- Previous experience as a Sous Chef or similar role in a Italian restaurant kitchen
- Strong understanding of cooking techniques, kitchen safety, and food handling procedures
- Ability to follow recipes accurately and consistently
- Excellent time-management skills and the ability to stay calm under pressure
- A team player with good communication skills
- Flexible availability, including nights, weekends, and holidays
