Job Purpose:
The Sous Chef plays a key role in food production, staff development, and maintaining the highest quality and efficiency in line with Crystal Catering standards and health regulations. This position serves as the second-in-command in the kitchen, capable of managing operations and events in the absence of the Executive Chef.
Key Responsibilities:
Food Preparation & Execution:
- Lead food prep, plate-up, and event execution with attention to timing and quality.
- Document recipes and create detailed prep lists; assign tasks based on staff skillsets.
- Ensure all dishes meet quality standards through tasting, inspection, and final approval.
- Manage dietary accommodations and special requests efficiently.
- Continuously develop and enhance menu items and presentations.
Food Safety & Compliance:
- Monitor food safety, storage, and sanitation practices to meet health department and HACCP standards.
- Train staff on safe equipment usage and proper hygiene protocols.
- Maintain compliance with fire marshal and health department regulations, including emergency protocols.
Administrative & Leadership:
- Manage food and labor costs to meet budget goals.
- Conduct inventory, place orders, and maintain vendor relationships.
- Recruit, train, and retain staff; foster a positive work environment through team-building and mentorship.
- Assist with scheduling, payroll verification, and staffing adjustments.
- Address conflicts diplomatically and ensure professional communication at all levels.
Qualifications:
- Culinary degree preferred; minimum 3 years of relevant experience.
- ServSafe certification required.
- Strong leadership, problem-solving, and communication skills.
- Ability to work in a fast-paced environment, including nights, weekends, and holidays.
- Must be willing to travel to other venues as needed.
- Physical ability to stand, walk, and work for extended periods.
