Summary/Objective

The Executive Sushi sous Chef is  an executive-level Sous Chef  responsible for assisting the Executive Sushi Chef with all aspects of the sushi kitchen operations, including staff management, quality control, menu development, and ensuring the highest standards of sushi preparation and presentation, often taking on additional leadership responsibilities. We are seeking a candidate that either has sushi experience or willing to learn to help assist the omakase chef. Candidate must have a positive attitude, apt knife skills, strong work ethic, and is a team player.

Assist Executive Sushi chef with preparing dishes based on recipes and uphold high standards.

  • Ensure the quality and freshness of ingredients used.
  • Maintain cleanliness and organization for all areas of the restaurant.
  • Collaborate with the sushi chef to ensure smooth operations.
  • Converse and give high quality customer service to all of our customers.
  • Adhere to food safety and sanitation guidelines.
  • Stay updated on current industry trends and techniques.

Supervisory Responsibility

This position helps manages all restaurant hourly Sushi Chefs/cooks and is involved in the planning, hiring, training and development of the Sushi kitchen staff. 

  • Strong leadership and supervisory skills, including the ability to motivate and train staff.  
  • Oversee daily sushi kitchen operations, including inventory management, ordering supplies, and maintaining proper sanitation.  
  •  Ensure efficient workflow and timely execution of orders during peak service periods. 
  • Address any issues or concerns arising in the sushi kitchen promptly. 
  • Effectively communicate with the with all kitchen staff, and dining room personnel. 
  • Collaborate with the culinary team to ensure consistency across the menu. 
  • Provide feedback to the Executive Sushi Chef on customer preferences and operational issues

Required Education and Experience

  • Degree from Culinary Arts school is preferred.
  • Three (3) or more years in Sushi Kitchen Management.
  • Knowledge and experience in Asian Fusion. 
  • Must have excellent leadership skills, a positive attitude, and ability to effectively train new staff.
  • Prior experience in menu creation, recipe writing and coaching/training.
  • Excellent written and verbal communication and problem-solving skills
  • Must be able to work flexible hours and days. Must exhibit top-notch teamwork.
  • Knowledgeable of Microsoft Office products.
  • Must be able to work well under pressure; meet deadlines and ticket time goals.
