Job Description

We are seeking a Culinary Director to lead the team at Montague Diner, a newly opened classic American diner located in Brooklyn Heights. 

As the Culinary Director, you will be responsible for overseeing all aspects of the kitchen operations. Your role will involve crafting a menu that celebrates classic diner fare while also introducing creative elements that enhance our offerings. You will lead and inspire the kitchen team, ensure the highest standards of food quality and safety, and contribute to a welcoming dining experience for our guests.

Key Responsibilities:

  • Menu Development: Design and maintain a menu that showcases traditional diner favorites with occasional innovative twists. Ensure the menu reflects seasonal availability and customer preferences. Run daily and weekly specials.
  • Kitchen Management: Oversee daily kitchen operations, including food preparation, cooking, and plating. Ensure all dishes are prepared to the highest quality and consistency.
  • Staff Leadership: Manage and mentor kitchen staff, including cooks, prep staff, and dishwashers. Conduct training, provide feedback, and foster a positive and productive work environment.
  • Inventory and Purchasing: Manage inventory levels and ordering of kitchen supplies and ingredients. Establish and maintain relationships with vendors to secure the best quality products at competitive prices.
  • Health and Safety Compliance: Ensure compliance with all health, safety, and sanitation regulations. Conduct regular inspections to maintain a clean and safe kitchen environment.
  • Cost Control: Monitor food costs and implement strategies to reduce waste and optimize efficiency. Prepare and manage kitchen budgets.
  • Customer Interaction: Engage with guests as needed to gather feedback and ensure satisfaction. Address any issues or concerns related to food quality and service.
  • Menu Planning: Plan and execute daily specials and seasonal menu items. Continuously evaluate and update the menu based on guest feedback and industry trends.

Qualifications:

  • Experience: Minimum of 8 years of experience as a chef, with at least 4 years in a leadership role. Experience in a high-volume restaurant or diner or similar establishment is preferred.
  • Education: Culinary degree or equivalent experience is highly desirable.
  • Skills: Strong leadership and organizational skills. Excellent knowledge of classic diner cuisine and modern culinary techniques. Ability to manage a team and multitask effectively in a fast-paced environment.
  • Certifications: Food safety certification and other relevant culinary certifications are a plus.

Physical Requirements:

  • Ability to stand for long periods and lift up to 40 pounds.
  • Capability to work in a hot, fast-paced kitchen environment.
