Executive Chef - New French Restaurant
Intimate new concept with less than 80 seats is debuting in Hollywood! Looking for a talented Exec Chef to lead the opening, oversee culinary, and creatively collaborate with passionate and experienced ownership. French brasserie format through a California ingredient lens.
Past French cuisine experience required and having staged or worked in France a huge plus!
Executive Chef Responsibilities:
- Develop the opening menu and subsequent seasonal evolutions
- Ensure that all food and products are expertly and consistently prepared
- Maintain operational control of purchasing, receiving, and inventory of all kitchen items
- Ensure that all equipment is kept clean and kept in excellent working condition
- Schedule labor as required by anticipating business activity while ensuring that all positions are staffed as needed and labor cost goals are met
- Provide employees and staff with proper training on all recipes as well as maintaining cleanliness, sanitation, safety and organization
- Provide leadership and mentorship to culinary team
- Create a work environment that promotes teamwork and mutual respect
Executive Chef Skills/Qualifications:
- Ample and expert knowledge of French cuisine
- 3 years as an Executive Chef OR 5 years in senior leadership roles such as Chef de Cuisine
- Dedication to excellent food quality and ensuring compliance with all health and safety, and safe food handling practices
- Passion for food and guest experience!
- Ability to communicate effectively in a positive fashion
- Experience in food cost, labor cost, menu costing
- Active ServSafe Management Food Safety Certificate
- A flexible schedule. Mornings, nights, weekends and holidays are required
Compensation Package Includes:
- Salary base in the $100-$120k range, depending on experience
- Medical insurance
