Rolld Sushi is an exciting new quick-serve sushi concept dedicated to bringing high-quality, fresh, and delicious sushi to the fast-casual dining scene. Ahead of the launch of our first location, we’re looking for an ambitious, passionate, and experienced sushi chef to lead the culinary team and play a key role in shaping the future of our brand.
Role Overview:
This position offers a unique opportunity to contribute to the concept’s growth, play a critical role in future restaurant openings, and help shape the culinary identity of our brand. Given aggressive expansion plans, the ideal candidate is a career driven individual who can lead all aspects of the business’ kitchen operations. The scope of the role will include menu development and production, assisting in the design/layout of the kitchen, managing supplier relationships, team member training, and ensuring consistency and quality across all locations.
Key Responsibilities:
- Menu Development: Lead the creation and evolution of the menu, ensuring it aligns with our brand’s vision and customer expectations. Stay current with consumer trends and incorporate innovative, yet approachable, dishes into our offerings.
- Sushi Preparation: Master the art of sushi making, preparing high-quality hand rolls to the highest standards of freshness and consistency. Oversee all sushi production in the kitchen and ensure quality control.
- Managing Supplier Relationships: Manage relationships with key food suppliers to ensure the use of highest quality ingredients in a cost effective manner.
- Kitchen Development: Collaborate with the leadership team to identify and source kitchen equipment, design an efficient kitchen layout, and optimize workflows to ensure smooth operations. Provide input into the setup and layout for future locations.
- Staff Training & Leadership: Train and mentor line chefs, ensuring they are equipped with the skills, knowledge, and techniques necessary to produce the perfect hand rolls consistently. Establish and enforce kitchen standards and best practices.
- Operational Efficiency: Develop systems and processes that maintain efficiency, consistency, and quality in a fast-paced, quick-serve environment. Assist in setting up and monitoring operational procedures, including food safety, inventory control, and kitchen hygiene.
- Expansion Support: Play a key role in the opening and launch of new restaurant locations, helping with training, setting up kitchens, and transferring operational knowledge to new teams. Support the overall growth and scaling strategy for the brand.
- Quality Control & Consistency: Ensure that each dish leaving the kitchen meets the highest standards for quality, taste, and presentation. Oversee daily inventory, ordering, and prep to maintain consistency.
Qualifications:
- Experience: Minimum of 5 years of experience working as a sushi chef in a fast-paced kitchen environment, with at least 2 years in a leadership role.
- Culinary Skills: Expertise in sushi making, including knowledge of fish and seafood preparation, knife skills, and presentation. Familiarity with traditional and modern sushi techniques.
- Leadership: Strong management skills with experience leading and training kitchen staff. Ability to inspire, motivate, and mentor a team while maintaining a positive, efficient work environment.
- Operational Knowledge: Experience with kitchen equipment selection, layout, and inventory management. Ability to design workflows that maximize productivity and minimize waste.
- Creative Vision: A passion for food creativity with the ability to innovate while maintaining consistency and quality. Knowledge of current food trends, particularly in sushi and Japanese cuisine.
- Communication: Excellent communication skills with the ability to collaborate with other team members and departments, including front-of-house staff and management.
- Flexibility: Willingness to adapt to a growing company’s needs, including helping with new location launches and supporting operational challenges as the brand expands.
