Sous Chef
Location: Santa Monica, CA
Salary: $70,000 - $75,000 + Bonus and Benefits

We are seeking a dedicated and experienced Sous Chef to bring their expertise and leadership to our high-volume kitchen. Candidates with fresh pasta and wood-fired pizza oven experience will be given strong consideration as we continue to elevate our dynamic menu.
Job Summary
The Sous Chef is responsible for supervising back-of-house operations and ensuring exceptional quality in every dish. This role combines leadership, culinary skills, and organizational expertise to maintain a high-functioning kitchen that exceeds guest expectations.
Key Responsibilities
Operational Excellence:
  • Oversee daily kitchen operations to ensure quality, consistency, and efficiency.
  • Maintain the cleanliness and organization of the back-of-house and the entire venue.
  • Supervise preparation for regular service, catering, take-out, and events.
  • Ensure recipe accuracy, food safety, and adherence to Department of Health standards.
  • Manage kitchen inventory, purchasing, and operational systems, including payroll.
  • Ensure all equipment and systems are in good working order and compliant with regulations.
  • Develop and implement opening and closing procedures for seamless operations.
Culinary Leadership:
  • Possess in-depth knowledge of recipes, food menus, and station-recipe-books.
  • Organize and develop new recipes for potential menu items and specials.
  • Lead by example during service, ensuring expediting standards and efficient communication.
  • Train and coach team members in food preparation, presentation, and kitchen operations.
  • Ensure preparation and presentation of menu-focused items for daily pre-service meetings.
Team Development:
  • Assist in interviewing, hiring, and training new kitchen team members.
  • Schedule and support the development of back-of-house employees.
  • Set clear expectations and provide feedback to foster team growth.
  • Promote a positive and collaborative work environment, emphasizing teamwork.
Guest Experience:
  • Ensure the delivery of high-quality dishes that align with lephante's culinary vision.
  • Quickly and effectively address any guest concerns or issues related to food quality.
Qualifications
  • Fresh pasta and wood-fired pizza oven experience strongly preferred.
  • Minimum 2-3 years of supervisory or management experience in a high-volume kitchen.
  • Associate degree in Culinary Arts or equivalent work experience preferred.
  • Strong skills in menu planning, team building, and problem-solving.
  • Proficiency with Microsoft Office, POS systems, and kitchen technology.
  • Ability to work in a fast-paced, high-pressure environment with a focus on detail.
  • Physical ability to lift up to 50 lbs., stand for extended periods, and perform repetitive tasks.
  • Flexible availability, including evenings, weekends, and holidays.
