About The Role:
Blue Hill at Stone Barns is a two-Michelin star restaurant and leading voice in the sustainable food movement. Together with our nonprofit partner, Stone Barns Center for Food & Agriculture, we form a research and education institute working to develop a regional and ecological future of food.
The Butcher will be responsible for assisting the restaurant’s Sous Chefs, Chef de Cuisine, and Executive Chef Dan Barber through the processing and production of various menu items in the butchery department. This includes the rendering of whole animal carcasses, production of specialty meat goods, and assignments pertaining to menu and recipe design.

- Experience: minimum 2 year experience in a butchery position, or equivalent knowledge and experience.
Tasks may include:
- Processing animal carcasses for use in the kitchen and as standalone menu items.
- Assisting in the development, standardization, and implementation of recipes and menus.
- Understanding dietary restrictions and how they affect menu items.
- Checking ingredient quality and receiving deliveries.
- Collaborating closely with the culinary team to ensure seamless execution of service and culinary R&D programs.
- Attending Cook’s meetings.
- Maintaining equipment, tools, and the physical workspace.
- Complying with all health department standards and practices and maintaining a clean and orderly work environment at all times.
- Performing all other job-related duties. This position requires manual dexterity and the ability to follow oral/written instructions and procedures. To successfully perform duties, you must be able to safely lift up to 50 pounds and stand for long periods.

The Details:
- Compensation: $18- $22 / hour

- Location & Hours: Full time position in-person at Blue Hill at Stone Barns in Pocantico Hills, NY (~1 hr drive from NYC). Shifts may involve working evenings and weekends.
