Jon Shook and Vinny Dotolo's commissary kitchen is looking for a motivated QA associate looking to learn and be a part of a fast paced environment that produces over 1,000 meals a day for Delta airlines.

The Quality Assurance associate is expected to:

? Consistently maintain a high level of cleanliness throughout the facility, including
the dish station, kitchen, walk-ins and common areas.
? Enforce uniform, jewelry, and hair covering standards in the facility.
? Oversee quality control for all finished Delta items, working with lead packers

?Assist with packing finished food products
? Oversee food safety standards (FIFO, food storage and labeling/date marking, proper cooking and cooling, proper food preparation time limits, thermometer calibration, refrigeration unit temperature verification, facility/equipment sanitation)
? Ensure compliance with food safety and quality record keeping
requirements–including but not limited to cooking and cooling, cleaning,
temperature control, receiving, pot washing, and scale and thermometer
calibration
? Assist with food receiving process to ensure food safety
? Manage pot washing area (test strips, chemical ordering)
? Lead in maintenance of all equipment and facilities as it relates to food safety.

Work with Operations Manager to exceed all health department and third party
quality and food safety standards.
? Give specific direction to kitchen staff on proper food handling, hygiene, and PPE use.
? Assist in implementing HACCP and quality control program systems in the
kitchen
? Assist kitchen staff and dishwashers with duties as needed.
? Assist with staff training, as necessary.

? Reports to: CDCs, Operations Manager
Qualifications:
? To perform this job successfully, an individual must be able to perform each essential

? Maintain an up to date Manager Servsafe certification and Anti-Harassment
certificate.
? High School degree is required.
? 1+ years’ experience in food safety.
? Spanish bilingual speaking ability is a plus.
