TenGoku is currently seeking a skilled and dedicated sushi chef with a specialization in creating exquisite makis, nigiris, and sashimi dishes to join our team. As a sushi chef focused on these specialties, you will be responsible for crafting visually stunning and flavorful sushi creations that will delight our guests. Your precision, creativity, and commitment to upholding the highest standards of quality will play a crucial role in enhancing our dining experience.
Responsibilities:
- Expertly prepare and present a wide variety of makis, nigiris, and sashimi dishes, showcasing exceptional attention to detail.
- Maintain a deep understanding of various sushi styles, ensuring authenticity and accuracy in preparation.
- Handle and cut raw fish and seafood with the utmost precision, maintaining consistency in portioning and presentation.
- Follow prep lists and recipes.
- Collaborate closely under the direction of the Executive Chef and with kitchen staff to coordinate timing and ensure smooth order flow during service.
- Adhere rigorously to hygiene and food safety standards, ensuring the safety of both colleagues and guests.
- Keep workstations and equipment clean and organized, adhering to sanitation practices.
- Innovate and contribute to the development of new dishes, experimenting with flavors, ingredients, and presentations.
- Manage inventory efficiently, minimizing waste and ensuring optimal storage of ingredients.
- Engage with guests when appropriate, answering questions and showcasing your knowledge.
Qualifications:
- Proven experience as a sushi chef with a strong focus on creating makis, nigiris, and sashimi.
- In-depth knowledge of different fish and seafood varieties, including their flavors and textures.
- Thorough understanding of food safety protocols, particularly in handling raw seafood.
- Creative mindset and the ability to develop new dishes and innovative presentations
- Strong teamwork and communication skills
- Excellent time management abilities
- Willingness to work long shifts, including weekends and evenings.
- Relevant culinary training and certifications are a plus.
