Job Description

FL Hospitality Services is seeking a talented and experienced Chef de Cuisine to join the culinary leadership team of a new fine dining restaurant in Raleigh, NC. Reporting directly to the Executive Chef, the Chef de Cuisine will play a vital role in ensuring the kitchen operates at the highest level of excellence. This position requires a passionate and creative culinary professional who can lead a team, maintain exceptional quality standards, and bring innovative ideas to life while respecting the vision set by the Executive Chef.

What you will do:

Kitchen Operations
  • Manage day-to-day kitchen operations, ensuring efficiency and consistency in execution.
  • Oversee all aspects of food preparation, cooking, and plating, maintaining the highest standards of quality and presentation.
  • Collaborate with the Executive Chef to develop and refine seasonal menus that align with the restaurant’s globally inspired concept.
  • Ensure all dishes meet established recipes, portioning, and flavor profiles.
Team Leadership
  • Supervise, train, and mentor the culinary team, fostering a positive and professional work environment.
  • Lead pre-service meetings to communicate daily specials, guest preferences, and key service details.
  • Manage team schedules and ensure proper staffing for efficient kitchen operations.
  • Conduct performance evaluations, providing coaching and development opportunities for team members.
Inventory and Cost Control
  • Oversee inventory management, including ordering, receiving, and proper storage of ingredients.
  • Monitor food costs and labor budgets, implementing strategies to maintain profitability without compromising quality.
  • Collaborate with the Executive Chef to establish and maintain vendor relationships.
Health, Safety, and Compliance
  • Ensure all kitchen staff adhere to health and safety regulations and maintain a clean and organized workspace.
  • Uphold the restaurant’s commitment to food safety standards, including proper handling, storage, and labeling practices.
Collaboration and Innovation
  • Work closely with the Executive Chef to bring creative concepts and culinary ideas to life.
  • Participate in menu tastings and provide input to enhance the guest experience.
  • Stay current on culinary trends and techniques to keep the restaurant at the forefront of the dining scene.

Qualifications:

Experience:

  • Minimum of 5 years in progressive kitchen roles, with at least 2 years as a Sous Chef or similar leadership position.
  • Fine dining experience required; global cuisine knowledge preferred.

Skills:

  • Strong leadership, organizational, and time-management abilities.
  • Expertise in culinary techniques, food preparation, and plating aesthetics.
  • Financial acumen, including managing food costs and labor budgets.
  • Ability to thrive in a fast-paced, high-pressure environment.
  • Food safety certification (e.g., ServSafe) required.
