VIVA! Miami, crafted by the renowned Chef Ray Garcia, is a culinary destination set to redefine the dining experience in Sunny Isles Beach. ¡VIVA ! Miami will be located in the reimagined Newport Beachside Hotel and Resort, which will relaunch as The Sunny, Miami’s new premier beachside retreat opening in late 2024.
¡VIVA! Miami promises a vibrant fusion of flavors, innovation, and artistry that captures the essence of Miami's dynamic food scene. We’re looking for a dynamic and passionate Restaurant General Manager to lead our team into this new chapter.
The future Sunny in the heart of Sunny Isles Beach is poised to redefine the beach getaway experience offering a perfect blend of rich history and unparalleled amenities. The resort will feature 339 spacious guest rooms, an eclectic private art collection, six food and beverage outlets, a fitness center, spa & salon, ocean-front pool with tiki bar and fire pits, beach club, and over 22,000 square feet of event space, including a unique oceanfront terrace.
What you will be doing:
- Inspire, motivate, and manage a dedicated team of front-of-house and back-of-house staff, fostering a positive and collaborative work environment.
- Ensure every guest leaves with an unforgettable dining experience, maintaining the highest standards of service and hospitality.
- Oversee daily operations, including staffing, scheduling, inventory management, and financial reporting, ensuring efficiency and profitability.
- Collaborate closely with Chef Ray Garcia to maintain the restaurant’s culinary vision and implement new menu items, promotions, and events.
- Work with hotel management to ensure seamless integration of the restaurant into the Hilton Curio Collection, aligning with the brand’s luxury standards.
- Monitor and manage budgets, control costs, and drive revenue through strategic planning and execution.
- Develop and execute marketing strategies to attract both local and hotel guests, and actively engage with the community to promote the restaurant.
- Ensure all health, safety, and licensing regulations are adhered to, maintaining a safe and compliant operation.
What we are looking for:
- Proven experience as a Restaurant General Manager or similar leadership role in a high-end restaurant or hotel.
- Strong understanding of restaurant operations, including front-of-house, back-of-house, and financial management.
- Excellent leadership, communication, and organizational skills.
- Ability to work under pressure in a fast-paced environment.
- Experience working in a hotel setting is a plus.
- Passion for delivering exceptional guest experiences and a keen eye for detail.
- Ability to collaborate with top chefs and implement creative culinary concepts.
- Bachelor’s degree in hospitality management, business, or a related field is preferred.
- Ability to thrive in a fast-paced, dynamic environment.
As the Restaurant General Manager, you will play a pivotal role in overseeing the daily operations of ¡VIVA! Restaurant, ensuring an exceptional guest experience while driving revenue and profitability. You will be the face of our restaurant, working closely with Chef Ray Garcia to maintain our reputation for culinary excellence and outstanding service. Your role will help to redefine luxury dining at the Sunny.
