Our senior R&D scientist will be in our Sausalito office and will assist in the development of new and current products for formulated wine, beer, and spirit beverage categories. The ideal candidate has an impeccable palate, is highly organized, and has experience working with alcoholic beverage formulation.


Responsibilities:

  • Drive new product development processes, including formulation trials, stability testing, and prototype development of RTD cocktails, hard seltzers, wines, and spirits.
  • Work with other departments in supporting new product development
  • Be proactive with the improvement of products
  • Manage and lead projects such as creating technical plans, risk management, and supplier mitigation plans from concept to commercializatio.n
  • Work with flavor and ingredient suppliers (and the internal procurement team) to ensure a steady source of ingredients is available.
  • Stay on top of alcohol trends in industry.
  • Collaborate with Legal on formula filings and ensure compliance with product development.
  • Work with the Executive Team on managing technical timelines for new products and research projects.
  • Assist with preparing sensory samples and compound dilutions and blending for production.


  • Advise on formulation requirements for regulatory and label considerations
  • Coordinate testing for products as required
  • Ensure FDA or TTB requirement activities are compliant
  • Conduct product quality tests, including shelf life and product stability studies
  • Manage lab space and equipment and assist with general lab operation 
  • Document all experimental procedures in a laboratory or digital notebook

Requirements: 

  • BS or higher degree in preferably Food Science/Chemistry or a related discipline
  • 5+ years of experience in consumer product development
  • Experience implementing processes in food and beverage product development
  • Experience managing and developing a team of food scientists
  • Strong knowledge of TTB and/or food and beverage regulatory compliance
  • Passionate about food and beverage, and especially alcohol beverage products
  • Exceptional palate and sensory skills
  • Highly organized
  • Strong communication skills
