Fresco by Scotto is a premier Italian dining destination in New York City, renowned for its upscale ambiance, authentic cuisine, and high-energy atmosphere. It is a family-owned and operated affair for over three decades, with Rosanna Scotto and her children Jenna Ruggiero and LJ Ruggiero as current ownership.

We are seeking a dynamic and innovative Executive Chef to lead our kitchen with creativity, precision, and a passion for excellence. The ideal candidate will have experience managing a high-volume, fine-dining kitchen while inspiring both front and back-of-house teams.

Job Responsibilities:

Menu Development:

  • Develop and execute innovative, seasonally inspired, holiday & private event menus that balance creativity with customer preferences and industry trends.
  • Create and refine daily specials while maintaining the integrity of Fresco by Scotto’s signature dishes.
  • Stay current with culinary trends and incorporate fresh, innovative ideas into our offerings.

Kitchen Operations & Cost Management:

  • Oversee all kitchen operations, including inventory management, ordering, and cost control to maximize efficiency and profitability.
  • Implement and manage XtraChef software and integrate inventory management within Toast (training available if needed).
  • Maintain rigorous attention to portion control, waste reduction, and ingredient sourcing to optimize kitchen performance.
  • Maintain in-house recipes with financial cost values
  • Foster a culture of teamwork, accountability, and continuous learning.
  • Lead by example, inspiring and motivating both the back-of-house and front of the house teams to deliver exceptional guest experiences.
  • Maintain consistency in execution and uphold the restaurant’s reputation for excellence.

Food Safety & Compliance:

  • Establish and enforce best-in-class food safety and sanitation practices in full compliance with Department of Health regulations.
  • Ensure all kitchen staff are trained in proper food handling and safety procedures.
  • Maintain a clean, organized, and efficient kitchen environment at all times.

Hours of Operation:

  • Monday-Friday: Lunch 12:00 PM – 3:30 PM | Dinner 5:00 PM – 10:00 PM
  • Saturday: Dinner 5:00 PM – 10:00 PM
  • Sunday: Closed

Qualifications & Experience:

  • Minimum of 3-5 years of experience as an Executive Chef or Sous Chef in a high-volume, fine-dining restaurant.
  • Full knowledge of recipe cost values, P&L, & DOH requirements
  • Proven leadership skills with the ability to manage and inspire a diverse kitchen team.
  • Deep understanding of Italian cuisine, seasonal ingredients, and contemporary culinary trends.
  • Exceptional organizational and multitasking abilities.
  • Strong knowledge of food safety regulations; ServSafe certification or Food Handler’s License required.
  • Proficiency in kitchen management software is a plus.
