The Role
Sushi Cook
This position will be responsible for preparing sushi dishes and rolls. The AM Sushi Line Cook prepares high-quality sushi, sashimi, and other Japanese-inspired dishes, maintaining high standards of food safety, quality, and presentation. This role works as part of the morning kitchen team to ensure timely preparation and service for Lunch shifts.
The Responsibilities:
- Proficient in cutting, slicing and filleting different types of fish and vegetables
- Intermeidate knowledge of Japanese Cuisine
- Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation and food safety
- Able to execute various sushi-rolling techniques
- Communicating with wait staff to ensure that special requests and food allergy considerations are met
Qualifications: - 1+ years of experience in sushi preparation or Japanese cuisine, preferably in a high-volume setting.
- Knowledge of sushi preparation techniques, knife skills, and familiarity with health and safety standards.
- Ability to stand for extended periods, lift up to 50 pounds, and work in a fast-paced environment.
- Must be available for early morning shifts, typically starting at 6-7 AM, including weekends and holidays.
