Job Description

The team from Tsubaki and OTOTO, a modern izakaya and sake bar in Echo Park, seeks a full-time Floor Manager. Honored with the Bib Gourmand from the Michelin Guide and inclusion in the LA Times 101 Best Restaurants, Tsubaki is an LA-inspired, hospitality-forward izakaya with a strong focus on sake. Our sister restaurant OTOTO, located right next door, boasts one of the largest sake lists in LA and features a menu of Japanese drinking snacks highlighting farmers market produce, local seafood, and rotating weekly specials. This position will oversee service at both restaurants on a rotating basis.

Our restaurant culture is built around 'omotenashi,' the Japanese sense of hospitality that is all about anticipation and connection with guests. As a neighborhood restaurant, we place great value on our regulars, and strong hospitality skills and ability build relationships with guests is a must. We also apply these values internally, and strive to make sure our staff feels taken care of and respected.

Although sake knowledge is not required, interest in it is a plus! We offer lots of training on this incredible beverage, with lots of opportunity to taste, learn, and help run our program.

QUALIFICATIONS:

We're looking for someone with:

  • immense curiosity and love for food and beverage
  • excitement for genuine hospitality and service
  • excellent communication skills, both in-person and via email
  • patience and grace when interacting with guests and staff
  • a hands-on work ethic and strong sense of teamwork
  • an understanding of restaurant financials, P&L fluency
  • the ability to recruit, train, and inspire a team
  • a focus on problem-solving
  • strong computer and POS literacy (Excel, Toast, Resy, etc)
  • at least two years of restaurant management experience in a fast-paced, chef-driven dining environment (or similar)

ROLE EXPECTATIONS

  • open/close restaurant(s), depending on shift
  • provide consistent support to hourly team and maintain active participation in service
  • day-to-day operations, including cash management, menus, reservation oversight, POS maintenance, etc
  • handle any issues of guest relations with tact and grace
  • work in conjunction with leadership team to manage restaurant financials and control costs
  • exemplify good hospitality with the team, with guests, and with vendors
  • participate in staff education on food, beverage, and hospitality
  • work collaboratively to ensure continuous improvement in guest experience, service, operational effectiveness, employee retention, and satisfaction
