The Role
As Chef de Cuisine, you’ll be the heartbeat of the Cleome Table & Bar kitchen. Reporting directly to the Executive Chef/ownership, you’ll take command of the kitchen, executing the menu and collaborating on seasonal menu development. You will be in charge of daily operations, and a talented and driven culinary team. You’ll inspire, infuse your leadership with passion ensuring every dish meets Cleome’s standards of excellence, from ingredient to execution.
Key Responsibilities
• Culinary Leadership: collaborative innovative menu design, seasonal menus that reflect the bold and elegant spirit of Cleome.
• Team Management: Train, mentor, and inspire the culinary team to maintain a high standard of excellence and efficiency.
• Operational Oversight: Manage kitchen operations, including cleanliness, scheduling, inventory, and supply chain coordination, ensuring smooth daily service.
• Quality Control: Ensure every plate is a masterpiece—balanced in flavor, artful in presentation, and prepared with precision.
• Sustainability and Sourcing: Partner with local farmers and purveyors to source the best seasonal ingredients and uphold sustainable practices.
• Financial Acumen: Control food and labor costs, monitor inventory, and contribute to annual budget planning.
• Compliance and Safety: Maintain impeccable hygiene and safety standards in compliance with local health regulations.
What We’re Looking For
We need a leader who embodies passion, creativity, and professionalism. You’re hands-on, thrive in a fast-paced environment, and bring experience in upscale dining or innovative cuisine.
Must-Haves
• 5+ years of professional kitchen experience, with at least 2 years in a leadership role.
• Expertise in French techniques, with a love for Southern flavors and a commitment to sustainability.
• Exceptional organizational skills and the ability to manage multiple priorities.
• Strong communication and leadership skills to foster a positive, collaborative kitchen environment.
• Proficiency with food cost analysis and inventory management.
• ServSafe or similar food safety certification.
Nice-to-Haves
- Culinary degree or equivalent professional training.
- Experience sourcing ingredients locally and seasonally.
- Knowledge of dietary restrictions and creating inclusive menu options.
- Proficiency in the Spanish language.
