New, intimate omakase sushi restaurant opening in Venice and we need a head chef and sous! The perfect world, we find a chef that has a sous to bring with them.
This will be a 15 seat restaurant that will be doing a casual lunch (with rolls etc) and dinner will be Omakase only at $160 per person.
The chef we need is someone that is incredibly creative and has been in charge of Omakase menus in the past and not just reproducing a chef’s menu. The chef will be overseeing all kitchen operations from staffing to financials, so it is important the chef is strong with administrative duties and cost controls. Concept would be as if Scratch Sushi meet Sushi Nakazawa. Not hardcore, traditional Omakase but not “Americanized” sushi either. Innovative, seasonal, visually stunning and of course, amazing flavor/texture combinations. This is obviously a hands on position.
We are offering a base salary around $90k (DOE), all tips go to the kitchen (no server needed here), and for the perfect chef we will offer some ownership. This is the first of multiple locations so it’s important that this chef has a history of longevity in their past jobs as we want this person to be invested and will be around to open future locations.
