We are seeking a passionate and talented Sous Chef to join our dynamic culinary team. This role requires a strong background in contemporary Italian cuisine, leadership skills, and a dedication to culinary innovation and precision.
Position Overview:
As the Sous Chef, you will work closely with the Executive Chef to lead the kitchen team and ensure the delivery of consistently exceptional dishes. You will play a key role in menu development, kitchen operations, and mentoring staff, while maintaining the high standards of Erba’s culinary program.
Key Responsibilities:
Kitchen Leadership & Operations
- Supervise and coordinate all kitchen activities, ensuring a smooth and efficient service.
- Assist the Executive Chef in overseeing daily kitchen operations, including prep, service, and cleanup.
- Lead by example in the kitchen, maintaining professionalism, teamwork, and a positive work environment.
- Manage and train kitchen staff, ensuring adherence to recipes, techniques, and presentation standards.
- Enforce food safety, sanitation, and hygiene standards in compliance with health regulations.
Culinary Excellence
- Support the development and execution of menus featuring contemporary Italian cuisine with seasonal and locally sourced ingredients.
- Uphold Erba’s commitment to scratch cooking, including house-made pastas, sauces, and other key elements.
- Collaborate with the culinary team to refine dishes and maintain consistency in flavor and presentation.
- Ensure high-quality execution of all menu items, from antipasti to desserts, during service.
Inventory & Cost Management
- Assist in managing inventory, ordering, and receiving to ensure freshness, quality, and cost-effectiveness.
- Monitor food costs and waste, implementing strategies to maintain budgetary goals.
- Ensure proper portion control and use of ingredients to maximize efficiency and minimize waste.
Menu Innovation & Collaboration
- Work alongside the Executive Chef to develop seasonal menus and specials that align with Erba’s vision.
- Contribute to tastings, testing, and refinement of new recipes.
- Stay informed on culinary trends and incorporate innovative techniques into menu offerings.
Qualifications:
- 2+ years of experience as a Sous Chef or similar leadership role in a high-volume, upscale kitchen with a focus on Italian cuisine.
- Strong foundation in traditional and contemporary Italian cooking techniques, including pasta-making and modern plating.
- Proven leadership and team-building skills, with the ability to mentor and motivate kitchen staff.
- Exceptional attention to detail and a commitment to consistency and quality.
- Proficiency in managing kitchen operations, including inventory, scheduling, and cost controls.
- Strong knowledge of food safety and sanitation practices.
- A creative and adaptable approach to menu development and problem-solving.
- Culinary degree or equivalent experience preferred.
