Job Description

Job Summary: The Executive Chef is responsible for overseeing all aspects of the food service program within the community. This includes managing staffing, inventory and budget control, food handling, preparation, storage, and sanitation procedures. The role emphasizes providing excellent customer service to residents, their families, and team members.


Essential Duties and Responsibilities:

Customer Service:

  • Deliver exceptional customer service to residents and team members by meeting the standards outlined in the HERO program.

Managing People:

  • Maintain a visible presence in the dining room during mealtimes to gather feedback, observe interactions, and address concerns, ensuring high-quality food preparation, satisfaction, and presentation.
  • Build and maintain professional relationships with residents to resolve issues or concerns positively.
  • Provide coaching, feedback, and developmental opportunities to team members, fostering effective teams.
  • Hire staff who exhibit the required competencies, maintaining a low turnover rate to ensure consistency in the dining experience for residents.
  • Evaluate team members’ skills and competencies, provide regular coaching, and complete performance reviews on time.
  • Assess the needs of team members and recommend salary adjustments, transfers, promotions, and dismissals.
  • Ensure all team members complete required training per company policy, as well as state and federal laws.
  • Foster a cooperative and harmonious working environment conducive to maximizing employee morale and productivity.
  • Determine staffing levels and schedules based on the dining needs of residents.
  • Prepare and administer daily, weekly, and monthly job duty lists for all food service staff.
  • Ensure proper training and certification of all food service staff as required by company policy, and state and local guidelines are complete and up to date.

Administration:

  • Adhere to budgetary guidelines established by the company.
  • Maintain an accurate declining balance for food service budgets.
  • Prepare and enforce regular cleaning schedules and monitor compliance.
  • Prepare and place orders for all food and non-food items needed for daily food preparation and kitchen sanitation with company-approved vendors.
  • Provide accurate and timely reports to management, as required.

Production:

  • Schedule and supervise all food preparation activities, and cook as needed.
  • Establish menu items from approved recipes in accordance with company policies and procedures.
  • Develop creative menu items within provided guidelines for regional preferences requested by residents.
  • Always enforce safe food handling practices.
  • Ensure that foods and flavors meet and exceed residents’ approval.

Other Duties:

  • Perform other duties as assigned.


Job Qualifications:

California Requirements:

  • Must be at least 18 years of age.
  • Criminal clearance prior to presence in the community.
  • TB test results within seven days of hire, and a health screen within 30 days of hire (when transferring test results, TB or health screen cannot be older than six months).

Education:

  • BS or associate degree in culinary arts, preferred.

Experience:

  • Minimum 7 years of food service experience.
  • Minimum 2 years management experience.
  • Knowledge of food safety, sanitation, proper storage, and handling procedures.
  • Proper certification as required by state and local statutes, if required.
  • Ability to complete the company’s Food Service certification courses (i.e., ServSafe) as required and full understanding of HACCP requirements.
  • Must be computer literate.
  • Comprehend and communicate written and spoken English.
  • Ability to obtain a food handlers permit, if required.
  • Must understand and have knowledge of Safety Data Sheets (SDS).
  • Demonstrated prior experience with taking residents' meal orders, delivery, and service.
  • Consistent and punctual attendance for shifts.

Physical Demands:

  • Able to lift up to 50 lbs., push/pull up to 20 lbs., carry up to 50 lbs.
  • Requires constant standing and walking.
  • Frequent twisting and rotating head, neck, torso, and arms.
  • Occasionally will bend, squat, reach, climb stairs.
  • Able to handle, grasp, and reach occasionally to frequently throughout the workday.
