About Ostras:   Ostras is a Latin-Asian Oyster Bar and fine dining restaurant that seeks to showcase the beauty of the 19th parallel north, connecting Mexico with many Southeast Asian countries. We combine the flavors of Mexico, Thailand, Laos, Vietnam, and China to create a unique culinary experience. Inspired by renowned establishments like Mare in Chiang Mai, La Dosena in Mexico City, and Porto in Chicago, our mission is to tell the story behind our ingredients and the techniques from the lands they originate.

Job Summary:
The Prep/Line Cook is responsible for preparing ingredients, maintaining a clean kitchen, and cooking high-quality dishes in a timely manner, ensuring a seamless dining experience for our guests. This role requires a deep understanding of Latin and Asian fusion cuisine, strong attention to detail, and the ability to work efficiently under pressure.

Key Responsibilities: 
  • Food Preparation:
    • Prepare and cook dishes according to the restaurant's recipes and standards.
    • Prepare and measure ingredients for recipes, ensuring consistency and quality.
    • Wash, peel, and cut vegetables, fruits, and other ingredients.
    • Portion and package ingredients for use by line cooks.
    • Ensure all food is cooked to the correct temperature and consistency.
    • Plate and garnish dishes in an aesthetically pleasing manner.
  • Station Management:
    • Set up and stock stations with necessary supplies.
    • Maintain a clean and organized workstation throughout the shift.
    • Follow proper food handling and sanitation procedures.
  • Quality Control:
    • Inspect ingredients for freshness and quality.
    • Monitor food portions and waste to maintain cost control.
    • Ensure that all dishes leaving the kitchen meet the restaurant's high standards.
    • Minimize waste by using ingredients efficiently and following portion control guidelines.
  • Team Collaboration:
    • Work closely with the Executive Chef and other kitchen staff to ensure a smooth operation.
    • Communicate effectively with team members to coordinate and expedite orders.
    • Assist in training new kitchen staff as needed.
    • Help with receiving and storing deliveries.
  • Safety and Sanitation:
    • Adhere to all safety and sanitation regulations.
    • Regularly clean and sanitize kitchen equipment and tools.
    • Report any maintenance or safety issues to the Executive Chef.
Qualifications:
  • Education:
    • Culinary degree or equivalent experience preferred.
    • High school diploma or equivalent required.
  • Experience:
    • Minimum of 1 years of experience as a line cook or prep cook in a fine dining establishment, or equivalent experience.
    • Proficiency in Latin and Asian culinary techniques and ingredients.
  • Skills:
    • Strong knife skills and proficiency in a variety of cooking methods.
    • Ability to multitask and work efficiently under pressure.
    • Excellent attention to detail and presentation skills.
    • Strong understanding of food safety and sanitation practices.
    • Ability to work flexible hours, including nights, weekends, and holidays.
