Description Zanti Cucina Italiana River Oaks We are looking for a Junior Sous Chef to join our BOH team Main Purpose of the Job Prepare the culinary preparations according to the recipes indicated, using the techniques, type, quality, and quantity of ingredients required. Additionally it will require proper use of equipment and utensils, based on the quality standards and procedures of the company, the current sanitary regulations and the systems of food hygiene management that set international standards to contribute to the achievement of service objectives.
Main Duties/Core work activities •Prepare recipes according to the manual and standard established.
•Verify that the ingredients prepared and selected for the dishes comply with the quality and standards of the brand.
•Responsible for the minor and major team that is provided to develop their functions.
•Supervise and assign tasks to your subordinates.
•Check that the tasks assigned to your subordinates are carried out in safety and with the standards of the brand.
•Train and onboard all prep and line cooks.
•Participate in the briefings of the restaurant.
•Lift inventories of their production lines.
•Supervise the cleanliness of the kitchen.
•Operate the kitchen equipment according to the manufacturer's instructions.
•Report any anomaly on the property.
Specific Responsibilities: •Give the correct rotation to the use of the raw material.
•Responsible for cleaning your area.
•Organize and maintain the coolers, keeping them clean and tidy.
•Keep your refrigerator and freezer area neat.
•Before leaving, delivery your area to your partner of the new shift or if closing follow the established procedure and checklist.
•Plan and prepare the day's production.
•Prepare the list of raw materials for production the next day.
•Verify and request supplies according to the service requirement, following the established procedure.
•Fulfill assigned tasks with the chef in turn.
•Ensure that each assembled dish meets the quality required by the brand in terms of flavor, portion, assembly, and image.
•Carry out line work fulfilling requirements, work procedures and complying with hygiene standards.
•Properly store consumables and cooked foods according to the procedure.
•Make sure that before closing the restaurant all food is properly stored in its place and in the correct way.
•Use equipment and cooking resources efficiently to reduce unnecessary energy and water costs.
•Report any equipment failure.
•Be able to open and close the restaurant and oversee that the check list process accomplished.
•Oversee kitchen operations in line according to standards, policies, and procedures of the company.
•Assure the quality of the ingredients and preparation of the dishes is according to the Zanti recipes

Position Requirements Candidate Profile: - 4-6 years' experience in culinary, food and beverage, or related professional area.
- High school diploma or equivalent; Diploma from a culinary school will be an advantage.
- At least 3 years experience working in the kitchen of an Italian restaurant;
- +1 year experience as Junior Sous Chef, leading different kitchen lines-stations. Knowledge and experience with Italian food and ingredients as a specialty.
- Experience in a similar job position managing a kitchen team with employees in charge.
- Knowledge of various cooking procedures and methods (grilling, baking, boiling etc.
