The F&B Operations Manager will work closely with the General Manager to uphold the standards for all aspects of the operation with emphasis on the beverage program.The F&B operations manager will report directly to General Manager on all operational, staff initiatives and for all creative & service initiatives
Duties/Responsibilities:
- Assume sole responsibility for placing all beverage orders and ensuring they are accurately received
- Receive purchase approval from the GM for new product, guest facing materials and wares
- Work closely with controllers and Senior Management to purchase all wine, spirits, beer, beverages, consumables, CGS and small wares within operating budget
- Enter all invoices accurately into inventory management system and ensure items are correctly matched to POS items daily
- Review cost, pricing and sales on a weekly basis to meet COGS goals
- Edit and update beverage menus daily to maintain the image of the program in print, online and on any ordering platform
- Maintain an accurate and professionally formatted Beverage list
- Maintain strong relationships with existing and new vendors/suppliers to ensure access to best pricing and allocations
- Act as liaison between vendors to ensure that all information and services are appropriately set up
- Perform monthly inventory and submit end of period reports within specified timeline
- Encourage and build mutual trust, respect, and cooperation among team members
- Be present on the floor to perform wine and beverage service and give support to the management and service team
- Display leadership in guest hospitality, exemplify excellent customer service and create a positive atmosphere for guest relations
- Provide continuing guidance, feedback, and individual coaching to service staff to ensure standards of service are upheld.
- Interact with guests to obtain feedback on product quality and service levels.
- Manage, respond, follow up, and have urgency with guest issues and complaints
- Manage & run the floor consistently during shifts
- Closing will be a mandatory part of this role
Required Skills/Abilities:
- 5+ years previous service or supervisory experience at a fine-dining restaurant.
- Advanced knowledge of spirits/cocktails/wine and service.
- Advanced knowledge of food preparation methods and culinary terminology.
- Strong computer skills (Microsoft Office), and POS systems
- Availability to work a variable schedule, including weekends, and shifts from morning through late night
- Fluent in English. Bilingual is a plus.
- Ability to stand for extended periods, climb stairs repeatedly, reach repeatedly, frequently carry objects less than 20 lbs., bend, lift and move objects of 40 lbs. or more
