As the Bakery Manager, all things regarding restaurant operation are in your purview. Working with the other managers, you will be responsible for giving each guest warm hospitality through training and working with your team.
Our pastry chef will take over every piece of Bakery Operations, as well as overseeing the BOH cooks that work our hot line every morning and afternoon. Along with the Regional Director, this position is responsible for the consistent preparation of innovative and creative products of the highest quality, presentation, and flavor for in-house dining, special events/catering orders resulting in outstanding guest satisfaction.
Some duties may include:
Overall/Operations
- Ensures promptness, freshness/quality and consistency of goods produced
- Assists in enforcing hygiene and safety policies according to Dept of Health and company policies
- Examines equipment for cleanliness and necessary maintenance regularly
- Designs and develops new pastry recipes in conjunction with Regional Culinary Director
- Teaches preparation according to well-defined recipes and follows up to discuss ways of constantly improving processes and maintaining quality standards
- Incorporates regional, seasonal, and cultural ingredients and influences to create unique and playful offerings
- Maintains positive relationships with purveyors and local farmers
- Trains and motivates team to meet and exceed established execution standards on a consistent basis
- Assists leadership with training and development within the bakery team to ensure growth and excellence in areas such as proper technique, organization and cleanliness, teamwork, efficiency, creativity, etc. as delegated
- Displays exceptional leadership and immersion in company culture by providing a positive work environment and professional approach
Administrative Tasks - Manages ordering/purchasing and receiving of products
- Upkeep and completion of detailed weekly and/or monthly inventory
- Manages ordering system: updating product details, vendor access, daily reporting, etc.in Restaurant 365
- Directs or ensures completion of checklists, prep lists, order guides, cleaning lists, and quality control checks
- Troubleshoots issues regarding production and/or delivery logistics along with Culinary Director
Training & Guidance of Team - Delegates tasks and responsibilities according to each individual’s strengths and position
- Communicates with Culinary Director and General Manager on routine basis to assess and ensure the successful completion of responsibilities assigned to team members, including daily, weekly and long term needs for growth
- Encourages creative consensus among all team members; including feedback for improvement to procedures and protocols
- Provides positive feedback on performance on a regular basis
