Position Summary
As the BOH Concessions Manager at The Salt Shed , you will play a key role in ensuring the smooth operation of our concessions kitchen. Working closely with the head chef and culinary team, you will oversee production, food quality, and kitchen efficiency to ensure top-notch execution. This position is ideal for an experienced kitchen manager who thrives in a fast-paced environment and is passionate about high-quality food production.
Additional responsibilities include but are not limited to:
- Oversee the production and execution of all concessions and related food service operations.
- Maintain kitchen equipment and coordinate necessary repairs.
- Manage food inventory to ensure all concessions items can be executed efficiently.
- Ensure compliance with nutrition, sanitation, and safety regulations.
- Foster a culture of teamwork, cooperation, and respect among the team.
- Contribute to menu development and brainstorming creative new ideas.
- Maintain in-depth knowledge of food principles, best practices, and various cuisines.
- Monitor staff performance, product quality, and workflow, fostering improvement where necessary.
- Conduct daily line, cooler, and dry storage checks to maintain freshness, proper rotation, and compliance with health codes
- Enforce structure, teamwork, and open communication to drive kitchen efficiency and quality execution.
- Support wholesale, catering, and private event food preparation as needed.
About You:
- Proven experience as a kitchen manager in a restaurant, catering kitchen, or similar setting.
- Strong technical knowledge of food preparation techniques, cooking methods, and kitchen equipment.
- Understanding of food safety and sanitation best practices.
- Ability to work well under pressure in a fast-paced environment.
- Excellent communication and teamwork skills.
- Creativity and passion for cooking, with a working knowledge of a variety of cuisines and global flavors.
- Ability to enforce structure while fostering teamwork and open communication.
- Physically capable of reaching, bending, stooping, and frequently lifting up to 75+ pounds.
- Flexible availability, including evenings, weekends, and holidays as required.
- Culinary degree or relevant certification is a plus.
