Job Description

Proper Hospitality is seeking an experienced Chef de Cuisine to join the culinary team at The Shelborne by Proper, a renowned hotel re-opening and debuting in our portfolio in early 2025.


Our property will introduce four vibrant new food & beverage destinations to the neighborhood, each suited for warm weather dining, with an all-day signature restaurant, a lobby bar-lounge, and curated cafe. Resort amenities will include a spacious pool and lush garden lounge, indoor-outdoor cabanas, sundeck terrace, state-of-the-art fitness center, dedicated access to a private beach club, and more than 15,000 square feet of indoor-outdoor meeting & event space.


As Chef de Cuisine, you will be the visionary behind our culinary offerings, assisting in oversight of all kitchen operations to ensure the highest standards of quality, creativity and efficiency. You will collaborate closely with the Executive Chef and F&B team to develop seasonal menus that align with our brand’s luxury ethos, all while maintaining an inspiring and collaborative kitchen environment.


Key Responsibilities:


Culinary Leadership

  • Design and execute innovative, seasonal and locally inspired menus that enhance the guest experience
  • Maintain the highest culinary standards in taste, presentation and preparation
  • Stay updated on culinary trends and implement them appropriately to keep offerings fresh and competitive


Operational Management

  • Oversee daily kitchen operations, including food preparation, inventory management and cost control
  • Ensure all dishes are prepared in compliance with health and safety regulations
  • Develop and enforce kitchen policies and procedures to maintain efficiency and consistency


Team Development

  • Recruit, train and mentor a talented kitchen team, fostering a culture of creativity and excellence
  • Conduct regular performance reviews and provide constructive feedback to support staff growth
  • Lead by example to maintain morale and team collaboration in high-pressure environments


Financial Oversight

  • Manage the kitchen budget, ensuring food cost, labor cost, and overall expenses align with financial goals
  • Collaborate with both the Executive Chef and Director of Food & Beverage to develop pricing strategies for menus and special events


Guest Experience

  • Interact with guests to gather feedback and adjust offerings to meet their expectations
  • Support the execution of bespoke dining experiences, including private dinners, tastings, and events


Qualifications:

  • Minimum of 5 years’ experience in a leadership culinary role, preferably in a luxury or boutique hotel setting
  • Formal culinary training or degree in culinary arts
  • Proven track record of creating innovative menus and managing successful kitchen operations
  • Strong leadership and communication skills with the ability to inspire and motivate a team
  • In-depth knowledge of local, seasonal ingredients and sustainable practices
  • Budget management and cost-control expertise
  • Flexible and adaptable with a commitment to excellence in guest service
